Ingredients
Eggs – 10 large eggs
Soy Sauce – 1 cup
Water – 1 ½ cups
Sugar – 2/3 cup (or 1/2 cup sugar + 1/2 cup corn syrup)
Green Onions – finely chopped
Sesame Seeds – a generous sprinkle
Cheongyang Green Chili Peppers – finely sliced (optional for a spicy kick)
How to Make Addictive Soy-Marinated Eggs
1️⃣ Boil the Eggs
Bring a pot of water to a boil. Add a little salt and vinegar.
Carefully add the eggs and stir gently for the first few minutes. This helps center the yolks.
Boil for about 6 minutes for soft-boiled eggs.
Immediately transfer the eggs to an ice bath and peel them once they’re cool.
2️⃣ Make the Marinade
In a bowl, mix soy sauce, water, and sugar until fully dissolved.
Add chopped green onions, sesame seeds, and sliced Cheongyang peppers if you want a spicy kick.
3️⃣ Marinate the Eggs
Place the peeled eggs in the marinade, making sure they are fully submerged.
If the eggs are not fully covered, gently turn them halfway through the marinating time.
Refrigerate for at least 4-5 hours (overnight for best flavor).
4️⃣ Serve and Enjoy
Serve the marinated eggs over a bowl of warm rice with a spoonful of the marinade.
For a spicier kick, add some fresh sliced chili peppers on top.
Pro Tips
Adjust the sweetness to your taste by adding more or less sugar.
If you love a richer flavor, you can add a dash of sesame oil to the marinade.
These eggs can be stored in the fridge for up to 3-4 days.
Why They’re Called “Mayak Eggs”
